How it all works

Our GSB heat and serve Authentic Texas BBQ meals are available every Saturday , PICK UP from THE GSB MARQUEE at 5 Landy Ave, Highton Geelong.

Simply choose exactly what you'd like from our menu, either come in and order at the GSB Marquee, call ahead or order online and choose your preferred pick up time. If you have any difficulty placing an order, please contact us immediately so we can rectify the issue.

CATERING ORDERS CAN BE PICKED UP SATURDAY .

Meats are smoked fresh ensuring maximum taste and packaged in GSB's specialised packaging that seals in that Texas flavour and allows it to last 5 days in your fridge, fresh. Our packs keep full moisture and tenderness during the reheat process found on the instructions page (Click button below). The packaging allows the smoked meat to taste just like it's been rested after smoking it fresh. (See article at the bottom of this page)

Slaws and sides are freshly made to accentuate the smoky tones in the meats and balanced so as to not take away from its authenticity. Tender and juicy Texas BBQ, whenever you want, wherever you want. Brilliant!

  • 16hr Smoked Beef Brisket MB5+

    Black Angus Beef Brisket, wood smoked for 16 hours with an Authentic Texas method.

    No fancy rubs, no overnight brining or salty injections. Just pure smoke from vintage Queensland Ironbark wood, salt, pepper, garlic and LOVE. This beautiful and artistic process starts at 4am for us. It has to be low and slow to allow the connective tissues to break down, the collagen to render at 190F to carry through to an internal temp that probes like butter. The key is the resting process that allows coagulation of the rendered fat and collagen to occur giving your pallet a combination of crusty wood smoked seasoned bark and a mouthful of textures from the meat and render, aka "A PHENOMENA THAT CONSTANTLY INTRIGUES."

  • Garlic Buttered Corn Infused with Thyme

    Sweet and Juicy Australian corn kernels in a melted garlic butter, infused with thyme. It's slowly simmered so as to keep all of the flavour inside of the corn present. During the slow heat the corn opens its paws per se allowing the flavours of the garlic and thyme to seep into the corn and thicken from its natural starch template. A brilliant addition to many dishes and especially matched with our Double Smoked Maple Chicken.

  • 6 Hour Smoked Texas BBQ Beans

    These Beans are smothered in a homemade apple and molasses BBQ sauce, with a hint of chilli and ironbark wood smoked for 6 hours.

    Although a Texas process and tradition, it's incorporated with an old Mexican secret ingredient that renders this dish unexplainable when in the pallet. The smoke latches onto caramelisation layer and is stirred back into the mix several times during the smoke.

    In February of 2020, I was in Sydney and whilst there, I visited my friend Joe. And... Little did I know, but "ol" mate Joe happened to be a pit smoker on the competition circuit and was also sporting a remarkable collection of 33 different Webbers and 4 other various smokers. Although it was impressive, I thought he was crazy.

    Then, at lunch, he placed Smoked Beef Brisket, Beef Ribs and Baby Back Pork Ribs on the table.

    WOW.. And I really mean WOW.. Blown away was an understatement.. Now.. I had been cooking for 30 odd years, yet till that day I had never experienced anything quite like it.

    Immediately, another passion was born in me. The joy and frustration of learning the craft of Authentic Texas BBQ had begun.

    Using my years of culinary experience and satisfaction of making food for myself and loved ones, GSB's menu is intensely flavourful, condiment balanced, pallet filling and furthermore represents REAL FOOD FOR REAL PEOPLE! Hope to see you soon for a bite...

      This is GSB's secret...

      GSB has specialised packaging for our smoked meats that retains full moisture and smokiness that can be safely stored in your fridge for up to 5 days before consumption.

      Let's begin...

      Every pit master knows that BBQ shouldn't be microwaved. With conventional microwaving we would have to agree as the meat loses most moisture and texture which is what BBQ is really all about. Yet, how amazing would it be if this could be done and tasted fresh?

      How brilliant would it be to enjoy fresh and authentic BBQ anytime you like, and anywhere you choose?

      THE CHALLENGE WAS SET:

      Vacuum sealing didn't meet the quality required and mutilated the product, plus it didn't allow any circulation of heat and moisture to occur therefore it wasn't good enough. So, after months of trialling to achieve the correct consistency that allowed the right amount of heat in and not escape along with the moisture to circulate, was worth the journey of frustration. All of this and to find PACKAGING THAT IS BPA FREE and MICROWAVE SAFE, being able to adjust the power level to produce the gentle heat required for reheated BBQ perfection, well...

      WE FINALLY HIT THE JACKPOT!!!!!

      We were able to reproduce the flavour, moisture and texture of freshly smoked beef brisket and pulled chicken that was rested for 14 hours plus.... This was such a breakthrough, that we felt the urge to share this joy with everyone who loves Authentic Texas BBQ Anytime and Anywhere.
